What makes the texture so soft and melting?
Two things: the slow roasting and the ghee ratio. Gram flour roasted slowly in real desi ghee absorbs the fat completely, creating a crumbly-soft texture that melts as you eat it. Fast roasting or insufficient ghee produces a dry, grainy result. Ours is slow-roasted with the right ratio - the difference is immediately noticeable.
Is this made with jaggery or sugar?
Natural jaggery only. Most commercial besan laddus use refined sugar or sugar powder, which gives them an artificial whiteness and flat sweetness. Jaggery creates a warmer, more complex sweetness and a naturally golden tone that pure ghee-roasted besan deserves.
How long does it stay fresh?
2-3 weeks at room temperature in an airtight container in a cool, dry place. Up to a month refrigerated. Besan laddu is one of the longer-lasting laddus because gram flour and ghee are natural preservatives. Best within the first two weeks for optimal aroma and texture.
